Mussels - KHGI-TV/KWNB-TV/KHGI-CD-Grand Island, Kearney, Hastings








  • 1 lb. mussels
  • 2 strips raw bacon, diced
  • 1 tsp parsley
  • 2 scallions, sliced
  • 2 tsp blackened seasoning
  • 2 oz. white wine
  • 2 oz. cold butter
  • 2 oz. bleu cheese
  • 2 garlic cloves, crushed
  • 1 oz. red onion, diced
  • 1 oz. olive oil
  • 2 oz. grape tomatoes

Heat oil in large saute pan on medium-high heat. When it begins to smoke, add bacon. Cook about 1 minute. Add red onion and cook about 10 more seconds.

Deglaze with white wine. Add mussels, blackened seasoning and garlic and cook 6-10 minutes, or until mussels open.

shut off heat and add tomatoes, scallions, bleu cheese and butter. Toss until butter is melted.

Serve and enjoy!
