
Heat oil in large saute pan on medium-high heat. When it begins to
smoke, add bacon. Cook about 1 minute. Add red onion and cook about 10
more seconds.
Deglaze with white wine. Add mussels, blackened seasoning and garlic and cook 6-10 minutes, or until mussels open.
shut off heat and add tomatoes, scallions, bleu cheese and butter. Toss until butter is melted.
Serve and enjoy!
