Tea-Smoked Chicken

 

 

 

 

 

 

  • 2 oz. black or oolong tea
  • 1 tsp garlic, chopped
  • 2 oz. corn oil
  • 4 chicken breasts
  • 1/8 tsp chili flakes
  • 3 oz. mayonnaise
  • 1 1/2 oz. rice wine vinegar
  • 3-4 oz. carrots, julienned
  • 6-8 scallions, sliced
  • 1 star anise, crushed
  • 1 tsp sugar
  • 1 orange zest
  • green cabbage
  • 1 recipe ginger orange vin (see below)

Marinade chicken for about 20 minutes. Grill and finely dice; set aside.

Combine rest of ingredients, except cabbage, and let sit for 20 minutes. Wrap in cabbage leaves and serve with ginger orange vinaigrette as a dipping sauce.

Ginger Orange Vin

  • 2 oz. rice wine vinegar
  • 1 orange zest
  • 1 1/2-2 tsp ginger
  • 1/2 tsp garlic, chopped
  • salt, to taste
  • 1/4 tsp sugar

Whisk ingredients together.
