Combine all ingredients in mixing bowl and marinade desired meat 4-5 hours, or overnight.
Grill meat over hot coals (hickory smoke pellets are recommended).
Add to the Mojito Marinade recipe:
Combine all ingredients in a medium saucepan. Bring to a light boil. Reduce heat immediately to low.
Whisk in cornstarch slurry. Allow to thicken for five minutes.
Use as a marinade for chicken, shrimp, pork tenderloin or pork loin. If using pork loin, marinade overnight or up to a day and a half.
