
Four Easy Steps to a Perfect Prime Rib
Step 1: Preheat oven 450 degrees for 20 minutes. Place Prime Rib, straight from refrigerator, fat side up, on rack in shallow roasting pan. Insert meat thermometer into thickest part, not touching bone or fat.
Step 2: Season beef before roasting, as desired. Do not add water or cover roast.
Step 3: Remove roast when thermometer registers 135 to 140 degrees (medium rare) or 150 to 155 degrees (medium). Reduce temperature to 300 degrees, cook to 5-10 degrees below desired temperature. Tent prime rib loosely with aluminum foil. Let stand 20-30 minutes.
Step 4: Roast temperature will continue to rise about 5 to 10 degrees to final desired doneness and will be easier to carve. Carve across the grain, when possible. Garnish and enjoy!
