- 1 lb Italian Sausage (sweet, mild or hot)
- 1 med onion chopped
- 1 green pepper chopped
- 2-3 cloves garlic-minced
- 1 14.4oz. can tomatoes-Italian
- 1-2 14.5oz. can Great Northern Beans-un drained
- 1 cup carrots
- 1 medium zucchini-cubed
- 1 cup spinach
- 4 cups chicken broth
- 1 tsp Italian seasoning
- 1 tsp basil
- fresh grated Parmesan cheese
- Brown sausage, drain if necessary
- Saute onion and peppers until tender, add garlic
- Add tomatoes, broth and carrots. Simmer 15 minutes or until carrots are almost tender.
- Stir in beans and zucchini and simmer 10-15 minutes longer.
- The last five minutes stir in spinach,serve with grated Parmesan cheese.
