
Ingredients:
Brown seasoned (salt, pepper, garlic powder, Cumin to taste) chicken in vegetable oil 2 minutes per side. Take out set aside.
Brown onions and rice do not burn. Add tomatoes and rotel. Season to taste (same seasoning as chicken).
Add chicken and 1 cup water, cover and simmer on low for 30 min or until rice is tender.
Serve with pico, guacamole, sour cream on warm flour tortillas.
