LOADED BAKED POTATO SOUP
4-5 large baking potatoes (about 3 lbs)
1/2 c butter
1/2 c flour
1 tsp salt
1/2 tsp pepper
7 cups whole milk
2/3 cup sour cream
1/4 c sliced green onions
10 strips of bacon, cooked and crumbled
1 cup shredded cheddar cheese
Bake potatoes at 350 degrees for 60-75 minutes or until tender; cool completely. Peel and cube potatoes.
In a large saucepan, melt butter; stir in flour, salt & pepper until smooth. Gradually add milk. Bring to a simmer and cook until thickened. Turn down heat and add potatoes, onions, bacon, sour cream & cheese.
Garnish with bacon, green onions, cheese & sour cream.
