Southwestern Cheesecake

Crust: 
1 cup finely crushed tortilla chips
3 Tablespoons melted butter

Filling:
2 pkgs (8 oz ea) cream cheese, room temperature
2 eggs
1 pkg (8 oz) finely shredded Colby/jack cheese
1 can (4 oz) chopped green chilies

Topping:
1 cup sour cream
Yellow, orange, or green bell peppers, small diced
Green onion, sliced
Tomatoes, chopped
Black olives, sliced

Heat oven to 325 degrees

Stir chips & butter together, press in the bottom of a 9 inch springform/cheesecake pan. Bake 15 min.

Beat cream cheese & eggs.  Mix in cheese & green chilies, pour over crust.  Bake 30 min.

Let cool several  hours, or refrigerate overnight.

Remove cheesecake from pan.  Spread sour cream over the top of the cheesecake and top with remaining ingredients.  Refrigerate until ready to serve.  

Serve with crackers.
