BLT Salad

BLT Salad
1 pound thin sliced bacon/turkey bacon
½ cup light mayo
3 tablespoons minced fresh basil
2 tablespoons red wine vinegar
½ teaspoon ground pepper
½ teaspoon minced garlic
6 cups torn romaine
1-1/2 cups grape tomatoes
4 slices whole wheat bread, torn into bite-sized pieces 
cooking spray
Mrs. Dash or salt-free seasoning

Preheat oven to 400 degrees F.

Spray a rimmed baking sheet with cooking spray. Lay bread pieces in a single layer on baking sheet and spray pieces with cooking spray. Sprinkle salt-free seasoning over the bread pieces.

Lay bacon strips in a single layer on a separate rimmed cookie sheet.

Place both baking sheets into the oven. Bake for about 12 minutes until bacon is crispy and browned and bread pieces are lightly browned. Lay cooked bacon slices on paper towel to wick the grease off.

Wash the romaine and grape tomatoes well under cold water.

Pat dry romaine lettuce and grape tomatoes. Placed dried lettuce and tomatoes into a large bowl.

In a small bowl, whisk together mayo, basil, vinegar, pepper, and garlic.

Crumbled cooked bacon over the lettuce. Add croutons.

Drizzle half of the dressing over the bacon lettuce mixture. Toss to coat.

Save reserved dressing for serving, if desired.
